- 1 lb (500 gm) ground LEAN beef
- 1 Tbs. fresh ginger paste
- Hot green chili paste (grated/minced green chilis. Add more or less as desired)
- 1 - 1.5 tsp. salt (or to taste)
- 1/2 cup finely chopped cilantro (fresh coriander)
- 2 slices of white bread, crust removed, soaked in water and squeezed of excess water
- 3/4 - 1 cup fine bread crumbs
- 2 eggs
- 1/2 cup oil for shallow frying (cooking oil)
- 1 English dictionary (maybe!)
- Mix the ingredients (beef, ginger, chilis, salt, cilantro, bread) with fingers. Make sure the bread is well mixed into the beef.
- Divide into 8 equal balls of meat mixture and make patties about 1/4" thick. Whisk eggs lightly in shallow dish with 1/4 tsp. of salt.
- Coat patties evenly with bread crumbs, dip to coat lightly in egg. Let extra egg drip off the patties. Fry in oil that has been pre-heated on med high heat for at least 5-6 minutes.
- Fry on each side until egg coating turns a nice light golden brown. Adjust heat accordingly if too hot or cold.

* Idée d'accompagnement / Suggestions: Squeeze lime/lemon on cutlets and serve with some tomato ketchup on the side. Eat with salad or potatoes (or both!).
