225gr butter, 225gr soft brown sugar, 225gr mixed fruit( raisins and sultanas), 1 teaspoon bicarbonate of soda, 280 ml milk, 100gr self raising flour, 100gr plain flour, 2 eggs, beaten, Caster sugar, Oven 150°c for 2 hours

Put butter, sugar, fruit, soda and milk in a large saucepan.Cook for 5 minutes over a low heat, stirring occasionally.
Gradually bring to the boil and simmer for 5 minutes.Remove from heat, add flour and eggs and mix thoroughly.
pour into a lined 19 cm cake tin and bake.
Leave cake in the tin to cool before turning out.Dust with caster sugar.
